Once our pastured and organically fed laying hens reach retirement we process them for stewing chickens. Because of their diet and exercise they are much leaner and the meat is a bit tougher. They make for the best soups and stocks due to their rich, yellow fat. By slow cooking them their meat becomes more tender. These are not to be confused with our broilers. Most cooks would agree that the best chicken stew starts with a pastured old laying hen. Average weight: 3lbs.
